The Victorian Dairy Industry: At a Glance

Victoria dominates Australia’s dairy industry, accounting for two-thirds of national milk production and almost 85 per cent of national dairy exports. Victoria’s dairy exports were valued at $2.3 billion in 2010, with dairy products exported to more than 100 countries.

The market for liquid milk, yoghurts and dairy desserts is largely domestic, while most milk powders and ingredient products are exported. The main manufactured dairy products produced in Victoria include fresh liquid milk, skim milk powder, butter, cheese, whole-milk powder, other consumer products (e.g. yoghurts, custards and dairy desserts) and specialised ingredients (e.g. whey proteins and nutraceuticals).

The dairy industry directly employs more than 21,000 people in regional Victoria, both on-farm and in the milk processing sector. Approximately one million dairy cows are run on 5000 dairy farms in Victoria, with production spread evenly across three main regions: South West Victoria, Gippsland and Northern Victoria.
